
Spanakopita

On my
trip to CA, I made spanakopita, and I got the idea to make
the filling and leave out the philo dough. I tried it, and
it's a yummy warm vegetable (reheats very well)...so I'm passing
it along:
1 lb frozen
spinach,
1/2 small onion (chopped),
2 tbsp butter or olive oil,
4 oz feta cheese (crumbled),
salt and pepper to taste,
1/2 cup fresh parsley (optional)
Okay this
is tough...saute the onion in a medium frying pan with butter
or olive oil. Put in everything else and cook until feta has
'disappeared' and it's all warm. Eat. :-)
