Sauteed Spinach

There are several restaurants here in Chicago that serve a
verion of this amazing spinach dish. Here is my version:
2 packages frozen spinach or two packs fresh
three tablespoons whipped butter
minced garlic (2 cloves)
1/4 cut minced scallions
pinch nutmeg
pepper to taste
1/2-3/4 cup parmesan cheese
Squeeze all the water out of the spinach using
a cast iron skillet melt butter and add garlic and scallions
sautee until transparent and add spinach and nutmeg and pepper
cook until wilted or warmed through and add cheese stir around
until cheese is melted
Serve immediately or put in the oven to bake
for 1/2 and hour for an even better taste! |
