Pepper Salad
(Raquel - raque2000)
2 green
bell peppers
1 red bell pepper
1 yellow bell pepper
1/2 onion (I used to put 2 onions but I cut it down because
of the carbs)
3 tbsps lemon juice
3 tbsps chopped fresh parsley
3 garlic cloves, smashed
olive oil,
salt and black pepper to taste
Pre-heat
the broiler, seed and cut the peppers in half lengthwise,
broil them until the skin is pretty much all black, remove
them and put them inside a plastic bag and let them sit for
a few minutes.
In the
meantime, slice the onion thinly and quickly saute them in
olive oil, don't overcook it. Get the pepper and rub off the
skin (I do it under running cold water), slice them into strips.
Mix the
peppers, sauted onions, parsley, garlic, lemon juice, season
well with salt and black pepper, add some more olive oil and
it's ready. You can eat it right away but it's better if you
let it sit for a while, like a couple of hours.
