Bean Pie

This recipe
is great. Especially for a change of pace. A meal in itself.
2 lbs.
of green beans, trimmed
Salt 1/2 onion, chopped fine (optional)
1 garlic clove, minced
1 T olive oil
4 sprigs parsley, chopped
1/2 t dried oregano
1/2 c grated Parmesan cheese
4 large or extra large eggs, beaten
1/2 c ricotta cheese
Pepper
1/3 c. walnuts (optional)
Preheat
oven to 300 degrees. Grease a 9" quiche dish with olive oil
(I actually use my stoneware from Kitch Gourmet and don't
use any oil). Cook the beans for 10 min. in a large pot of
boiling water. Meanwhile, cook the onion and garlic in the
olive oil in a nonstick skillet for about the same amount
of time. Drain the beans and cool them under cool water. Set
aside. Add the parsely and oregano to the onions and cook
for 10 min.
Cut the
beans into 1-in. lengths. Remove the skillet from the heat
and stir the beans in with the onions, along with half the
Parmesan and the eggs mixed with the ricotta. Transfer the
mixure to the prepared quiche dish. Add the walnuts (if desired)
to the remaining parmeson and scatter over the top. Bake the
pie for 45 min. or until golden brown on top.

and walnuts are used then the apporximate carbs are 7-8 grams
