Tomatoes

Serves 4

Salt Cookbook*
2 large fresh tomatoes, cut in halves,
½ teaspoon chopped fresh parsley (or ¼ teaspoon
dried),
¼ teaspoon basil, fresh ground pepper to taste,
1 T olive oil,
Preheat oven to 350F. Lightly spray 9x9 baking
dish with vegetable oil spray.
Place tomatoes in baking dish, cut side up.
Drizzle oil over tomatoes. Sprinkle remaining ingredients
on top and bake 20 to 30 minutes. Serve hot. (Does not reheat
well.)
I add one tablespoon of mozzerella or parmesan
cheese to the top when I remove it from the oven.
