I must
offer a caveate right up front--this recipe does not fit CALP
as I fixed it, but it is legal under CAD--it reflects two
of the subtle differences between the two plans.
I had
some chicken breast tenders that were frozen (unbreaded, of
course!). I thawed them out and cut them into bite-sized chunks
and sauteed them in a little olive oil to which I added a
clove of minced garlic. When they were done I added a sliced
zucchini and 1/2 medium tomato chopped, and sauteed until
the veggies were done.
Voila!
It was good!! CAD lets you have zucchini and more tomato than
CALP, but you could sub any veggies that you wanted--mushrooms,
green beans, broccoli.
Simple
yet satisfying! There are just days when I cannot face another
salad!
