
Chicken
Dijon Bites 2

2 whole
chicken breasts
3 tablespoons butter (I use chicken broth to cut fat instead)
3 tablespoons Dijon mustard
1 tablespoon parsley
1 tablespoon lemon juice
1/4 cup parmesan cheese
Cut chicken
into 1" cubes and brown in butter (or broth) for 10 minutes
until done. Add mustard, parsley and lemon juice and cook
another 2 minutes. Turn off heat, add parmesan cheese and
coat chicken.
