White Crepes

Take four
eggs, separate yolks from three of them and discard yolks,
combine the three whites with one egg, about 2 Tbsp. half
and half or milk, and a packet of Splenda if you use it. Whisk
it all until well beaten. Spray an omelette pan or small frying
pan with cooking spray. When oil is hot, pour about a quarter
of the egg mixture in the pan. Swirl it around until you cover
the bottom of the pan and the liquid sets (less than a minute).
Then you flip the crepe and cook the other side. This recipe
makes four crepes. I usually eat two for breakfast, smeared
with low fat cream cheese and a tiny bit of low-carb preserves
and rolled up like a blintz. Enjoy!
