Recipe for Lazy Cooks

Pour very
small amount of scrambled eggs in 8 or 9" skillet and quickly
swirl around to cover bottom. As soon as it sets on the edge,
pop on a lid and let the steam finish cooking (no tricky turning
needed:). Make a stack of these crepes and keep in the fridge.
Use as rollups with filling for breakfast. Or stack them and
slice into 1/2" strips. Use the strips on salad instead of
meat, or dice and add to ham salad for extra protein. My favorite
is to add the strips to canned Oriental veggies for a quick
chop suey meal.
