Quiche
(Nina)
6-8 bacon
slices
1-1/2C sliced mushrooms
1 small onion, chopped
1/2 of a 10oz pkg. frozen spinach, thawed and drained (Note:
I used fresh spinach...sauteed it with the mushrooms and onion
until it wilted.)
4 eggs
2C heavy cream
1/4t salt pepper
1/2C grated Jack cheese
1/2C grated mild Cheddar cheese
1/2C grated Mozzarella cheese
Heat oven
to 350. Cook bacon until crisp. Pour off most of fat. Crumble
and set aside. Saute mushrooms and onions in remaining bacon
fat. Add spinach; set aside. Beat eggs, cream, salt and pepper
well. mix in cheeses. Line bottom of pie plate with 3/4 of
bacon crumbs. Add spinach mixture. Pour egg mixture on top.
Top with remaining bacon crumbs. Bake 30-45 minutes or until
set.
