Passover Spinach Souffle

Makes 8 servings
Prep: 20 min.
Bake Time: 45 min

1/2 c chopped onion
1 clove garlic, minced
1 tbs. butter or margarine melted
1 pkg 8 oz. cream cheese softened
8 oz. farmer cheese*
1/8 tsp. each salt and pepper
3 eggs
2 pkg (10 oz. ea.) frozen chopped spinach, thawed, well drained
1/4 tsp. paprika
1/8 tsp. nutmeg

Cook and stir onion and garlic in butter until tender. Beat onion mixture, cream cheese, farmer cheese, salt and pepper with electric mixer on medium speed until well blended. Add eggs, 1 at a time, mixing well after each addition. Blend in spinach. Pour cheese mixture into greased 9 in. square baking pan. Sprinkle with paprika and nutmeg; cover.

Bake at 325 degrees for 30 min., uncover. Bake additional 15 min.

 

*Farmers cheese is a form of cottage cheese from which most of the liquid has been pressed. I'd bet you could use cottage cheese just as easily or experiment with other preferred cheeses. I haven't actually tried it yet but it did sound good to me. I might try experimenting with the cheese too to see what comes of it.
