Mexican Fudge

It's not quite what it sounds like. No chocolate. But it's really tasty.

Spread 1/2 lb. grated cheddar cheese on 9x11 or 7x11 baking dish. Combine 3 well beaten eggs and 1/4 jar (4 oz)of green salsa (I use Mrs. Renfro's) and spread on cheese. Spread another 1/2 of grated cheddar cheese on top and bake at 350 degrees for about 30 minutes. Cool for 10 minutes. Cut squares and enjoy!!

My son loved it so I only got 2 small pieces, which is probably just as well. Our green salsa is pretty hot, but you can make it milder or probably use any kind of salsa. Sandy
