Chili

I didn't see a chili recipe anywhere on the site, so I thought I'd share mine. I got the idea to try this when some friends of mine made vegetarian chili with broccoli in it.
2 lbs. of cooked ground beef or cooked diced chicken
2 14 oz. cans of stewed or diced tomatoes (with no sugar added)
1 green bell pepper, diced
1 bunch celery, diced

1 package of simply organic vegetarian chili packet
-OR-
2 tbsp. chili powder
2 tsp cumin
cayenne pepper to taste (usually 2 shakes)
2 tbsp garlic salt
2 tsp oregano
1/4 cup water

Basically, I take all of the ingredients and throw it in the crock-pot for about 6 hours or cook on medium on the stove, covered, for two hours. If you cook it on the stove, you should probably stir it every 20 minutes or so.

It's ready when the celery is no longer crispy. I usually serve it topped with shredded cheese. Sour cream and crackers are good with it (except my son usually eats the crackers and I don't since they're not legal).

If anyone tries it, let me know if you like it. You might have to adjust the spices to suit your own tastes. You may also want to cook it with the lid off for a bit if it's too liquidy.
