Fried Chicken (CM Friendly)

I've had this several times and it's from a low-carb cookbook. I made only a couple of changes to it. Gooood!!

4 chicken thighs or breasts (I use skinless)
1/2 teaspoon paprika
Salt & pepper to taste
Peanut Oil for frying
2-3 large eggs (or if you prefer, egg whites)
1/3 c. heavy cream
1 t hot sauce
1 c crumbled pork rinds (I use spicy red hot)

Several hours before cooking the chicken, rinse, pat dry and rub with paprika, salt & pepper. Refrigerate aside to season for at least 2 hours.

Whisk eggs or egg whites in a bowl with the cream and hot souces. Dip the chicken in the egg white mixture and then in the pork rind crumbs. (I put them in wax paper roll them with a rolling pin to crush them) Fry the chicken the hot oil, cooking them for 10 minutes on each side or turning them frequently. (Don't let temp go above 375 degress). When done, put them on a platter lined with paper towels.

These have about 39 grams of protein, 33..6 grams of fat (a little less if you use skinless chicken) and under 1g carb.
