Vegetables Glazed with Balsamic Vinegar

This is a great side dish with just about any kind of meat and it's very easy to make. It does take one medium onion, but since it makes 6 servings I figured the amount is negligible.

3 tbsp olive oil
1 1/2 red bell peppers, cut into 1/4-inch-wide strips (just to have an idea of the size)
1 1/2 yellow bell peppers, cut the same way
1 medium onion, thinly sliced
3 zucchini, trimmed, cut crosswise into 1/2-inch-thick rounds
3 yellow summer squash, trimmed, cut the same way
3 tbsp balsamic vinegar

Heat oil in large skillet, medium high heat. Add peppers and onion, sauté until beginning to soften, about 4 min. Add zucchini and squash, sauté until tender, about 8-10 minutes. Add vinegar to skillet boil until liquid is reduced to glaze and coats the vegetables, about 2 minutes. Season to taste with salt and pepper, serve.
