Mock Potato Croquettes

I've only tried this once but it was good. I think it's time I tried it again. Worst part is they are fried, but not bad once in a while. I don't remember where I found this.

1 large head cauliflower, chopped, cooked very soft
1 clove garlic
3 oz. cream cheese
1 tbsp. butter
Salt and pepper to taste

Cook cauliflower with garlic. Drain thoroughly. Add remaining ingredients and mash, whip with a mixer, or blend in food processor. Chill overnight.

Then when ready to fix:

2 beaten eggs
2 large packages of pork rinds, crushed finely in food processor or blender (try spicy ones also, they're great!)
Hot oil, at least 1 inch deep

The chilled mixture is very soft, so be prepared for a little mess. Using just a small amount of mixture, roll into 1-1 1/2 inch balls. Roll in beaten egg, then in crushed pork rinds. Place on plate to firm up slightly. Fry a few at a time in hot oil, turning once, about 2 minutes a side, until nicely browned and crisp. Remove from oil and place on paper towel to drain. Repeat until all croquettes have been cooked.

These can be served immediately, but they can be made ahead and even frozen. Then you just reheat in 350 degree oven for 15-20 minutes (longer if frozen). Crispy, crunchy and low carb.
