Green Beans with Ham
(Raquel - raque2000)

This is a Spanish recipe I learned from a friend, very simple and good. I never tried without the onion but I think you can reduce the amount without changing the final result too much. This serves 4-6, you may double or triple depending on how many people you'll serve:

1lb green beans;
3tbsp olive oil;
1 onion thinly sliced;
2 garlic cloves finely chopped;
3 oz prosciutto (ham) or bacon, chopped;
salt and black pepper.

Cook the beans in boiling salted water for 5-6 min; meanwhile heat the oil in a large frying pan, add the onion and fry for 5 min, add the garlic and prosciutto (or bacon) and cook for another minute or two. Drain the beans, add to the frying pan and cook stirring occasionally for 2-3 minutes. Season well and serve.
