Five Vegetable Slaw Salad

It has four/five (onion? says seasoning only) craving reducing vegetables in it, but you will have to eat it at your RM due to the honey in the dressing. I saw it on Food Network, recipe courtesy of Rachael Ray. I fixed the entire meal she suggested last night and my husband just loved it.

1 lb packaged shredded cabbage
1 large red bell pepper, seeded and cut in thin slices
1 large yellow (or green) bell pepper, seeded and cut in thin slices
4 scallions, sliced thinly (greens and whites)
I used a red onion sliced thinly
1/2 European seedless cucumber, halved lengthwise and thinly sliced (Have you guys tried this they are great, don't have to peel them and no indigestion)
2 limes, juiced
1/4 cup honey
3 tbsps olive oil or light colored oil
salt and pepper to taste

Combine vegetables in a bowl. In another small bowl, whisk lime juice and honey, and drizzle in oil to combine dressing. Pour dressing over slaw and season with salt and pepper. Makes 4 servings.

The great thing about this is it was just as good the second night. And, you can take it on a picnic/reunion with no worries since there is not mayonnaise, plus it tastes wonderful.
