Yummiest Steak Salad
(Nicole - mommy2alex_abbey)

This didn't take a rocket scientist to come up with but here it is (and a little story behind it):

I LOVE steak salads and I order them all the time at a local italian restaurant. In fact when I was pregnant with my daughter I was sending my dh out at least twice a week for a steak salad. Well, the good thing about low carb dieting is that you can have steak salad (only you can't have the traditional french fries on them, lol).

After awhile I decided I could make them at home and save a lot of money so here's my "Yummies Steak Salad" recipe:

Ingredients:

  • 1 package cut up steak (I buy the kind that's already cut that most people use for
    kabobs or stew, etc)
  • lettuce
  • shredded cheese (I use cheddar and colby jack)
  • mushrooms
  • broccoli (I buy the kind that's already washed and ready in a bag)
  • cauliflower (I buy the kind that's already washed and ready in a bag)
  • hot peppers
  • tomato
  • Ranch dressing (I use T. Marzetti's Buttermilk Ranch OR my own homemade from the packet)

Preparation:

  • Fry the steak in a skillet on the stove top in water, when they are almost done to your liking add the mushrooms

  • While the steak and mushrooms are cooking, get your bed of lettuce ready on a plate (or in a bowl, which ever you prefer). Add your cheese, broccoli, cauliflower, hot peppers and tomotoes. When the steak and mushrooms are ready - top the salad with them and then finish by adding your dressing and enjoy. YUM. I love it! I could eat it every night!

Now - I know this is simple, but is so good, I had to share. I mean whenever I eat it at night I feel like I have this great secret that I should share with others - LOL! And the great thing about salads is that you can add anything you like to them (you know low carb wise). Enjoy!
