Steak Roll-Ups

2 thinly sliced sirloin sandwich steaks (sometimes they are labeled as chipped steaks)
3/4 c. frozen chopped spinach, thawed
1 egg, beaten
3 T. parmesan cheese
1 T. minced onion
1/3 c. shredded cheddar cheese
pepper to taste

Mix everything but the steak together in a bowl. Spread 1/2 of the mixture on the steak carefully not going to the edges. Roll up and tie with string in three places. With 1-2 Tablespoons olive oil in a skillet, sear the rollups on all four sides. Place in a baking dish and bake for 30 minutes at 350 degrees. Let stand for 10 minutes after taking out of the oven. The only thing that I didn't like was that the cheese kind of melted out, but they were pretty good. Oh, and I had to add a little bit of salt to mine as I was eating it.

I imagine that if you wanted to eat this for your RM you could add some bread crumbs to the stuffing for your carbs.
