Mustard Fish
(Raquel - raque2000)

2 tablespoons dijon mustard
1 tbsp mayo
1 tbsp lime juice
Tabasco sauce to taste
Salt and black pepper and a little olive oil
1 white fish filet (I recommend orange roughy for this recipe), about 1 pound

Preheat oven to 400. Wash and pat dry the fish, drizzle a little olive oil on a baking dish, add the fish and sprinkle with salt and pepper. Mix the first 4 ingredients and spread it over the fish, cover the dish with foil paper and cook it until it flakes easily, I think it was about 15 minutes (it'll depend how thick/large is your fish fillet), remove foil and let it cook for another 5 min. Serve with a crispy green salad such as watercress. I also made this in the broiler once and it was great, not as juicy but really good.
