Cod (for RM)

5 garlic cloves finely chopped
about 1 cup mixed chopped herbs: parsley, cilantro and green onions
2 tbsps chopped black olives
salt and black pepper to taste

1 onion thickly sliced
2 (or more) cod fillets
1 tomato thickly sliced
1 large potato, thickly sliced (you can put them in the microwave with some water beforehand to speed up the cooking time)
Olive oil to taste

Mix the three first ingredients and season with salt and black pepper. In a heavy casserole (I use cast iron) arange the ingredients in layers starting with the onions, then the cod, tomato, potato and top with herb mixture (if you're using more cod, just make more layers in the same order, be sure to increase the amounts of everything else too). Sprinkle generously with olive oil, add more salt and pepper if needed and cook on medium to high heat until potatoes are soft and cod is fully cooked (should be white and should flake easily).
